This recipe is best with fresh corn on the cob. We will not require the husks for roasting, so you can buy them and shuck them on your own or buy them pre-shucked.
I prefer unsalted butter in this recipe because the Cajun seasoning already has salt in it. As with any recipe that utilizes a seasoning blend, it’s important to note that different brands vary in their salt and spice levels.
The amounts indicated in this recipe will work great with most blends but just bear in mind that some (like Slap Ya Mama seasoning for instance) are very heavy on the salt and spice, so you may want to adjust accordingly.

How I Perfectly Season and Roast my Corn Every Time
Melt the butter in the microwave and stir in the Cajun seasoning. I like to use a pastry brush to evenly coat my corn with the Cajun butter, ensuring that each bite will be well-seasoned.
Then, spread your corn on the cob out on a baking sheet and roast it on the middle rack of your oven for 20 minutes at 425°F.
If you want to line your baking sheet for quicker cleanup, use aluminum foil, not parchment paper.



How I Store Leftover Cajun Corn on the Cob
Leftover roasted corn on the cob is best when enjoyed within 5 days. I find it easiest to just wrap it in aluminum foil and place it in the refrigerator.
That way, you can just preheat your oven to 350°F, grab the leftover corn, and place it on the top rack all wrapped in the foil. It only needs about 5-7 minutes to reheat in the oven.
You may want to sprinkle a little extra seasoning on top once it’s reheated.
I typically just place the foil-wrapped corn directly on the oven rack, but you can also put it on a baking sheet for easier removal, whatever you prefer.

Instructions
- Preheat the oven to 425°F. If you want to line your baking sheet for quicker cleanup, use aluminum foil, not parchment paper. I use a small 6.5×9-inch baking sheet for this recipe and do not usually line it.
- In a microwave-safe bowl, melt the butter by microwaving for 30 seconds. If it needs more time, continue to heat in 10-second intervals stirring in between. Stir in the Cajun seasoning.2 tablespoons unsalted butter, 2 teaspoons Cajun seasoning
