For best results, you can chop up a fresh pineapple or buy some cut and packaged fresh pineapple at your supermarket. While I don’t recommend using canned pineapple as your sauce may be too runny, you can use frozen pineapple that’s been thawed.
When I originally tested this recipe, I added some coconut milk and while delicious, the idea of opening up a whole can of coconut milk just to use 1-2 tablespoons didn’t feel right.
I then tested it with just the lime, pineapple, garlic and seasoning and compared it to the version with Greek yogurt, and the Greek yogurt not only added an extra welcomed creaminess, but also a complexity in the flavor that stood out.
So, I landed on this finalized recipe with 5 ingredients. I used fresh lime, but you can also use lime juice. Whatever is easier. I recommend a whole clove of garlic rather than pre-minced here.

Blend it Until Smooth
This recipe is as simple as throwing everything together and blending it until it’s smooth and creamy. Peel the garlic clove and throw it in whole.
When you add your pineapple chunks, try to avoid adding any excess juice as it could thin out your sauce too much.
Any blender or food processor will work; I used a Nutribullet. Taste it and adjust. If you want more spice, you can add some cayenne pepper. If it needs more salt, add a pinch! You can also dial up the sweetness with some honey or agave.

How I Store my Pineapple Lime Sauce for Tacos
Leftover pineapple sauce will last in the fridge in an airtight container for 3-5 days. It can be served cold right out of the fridge.
If you prefer to serve it at room temperature, take it out of the refrigerator 30 minutes before serving.
