If you want all the celebratory fun of rainbow sprinkles but you’re more of a chocolate kind of dessert person, these Funfetti Brownies are for you!
This recipe yields decadent brownies with a rich fudgy texture and deep chocolate flavor, stuffed and topped with a generous amount of rainbow sprinkles. Plus, it’s simple to make, with just one bowl required!
I’ve been known to add sprinkles to turn up the fun on some of my recipes (see also: Funfetti Pancakes!) and my Condensed Milk Brownies are easily my most popular recipe, so this mashup was a MUST.
Funfetti Brownies Ingredients
Here’s everything you need:
- Chocolate chips. I used dark chocolate chips but milk and semi-sweet work, too!
- Unsalted butter.
- Oil. Any neutral oil will do.
- Granulated sugar.
- Eggs.
- Vanilla extract.
- All-purpose flour.
- Cocoa powder. I use dark cocoa powder.
- Salt.
- Rainbow sprinkles.
How to Make Brownies with Rainbow Sprinkles
Make Your Chocolate Brownie Batter First
Preheat your oven to 350°F and line your 9×9-inch or 8×8-inch square dish with parchment paper.
Add the chocolate chips, butter, and oil to a large microwave-safe bowl. Microwave in 30-second intervals on high, whisking in between until just melted.
Pro tip: If you’re one of those people who enjoys licking the batter bowl more than eating the actual brownies, I got you! Check out this 10-minute Edible Brownie Batter recipe!
Then, whisk in the sugar. Next, add the vanilla extract and eggs. Whisk again.
Finally, add the all-purpose flour and salt and whisk again. You’ll have a very thick batter. Fold in about half of the sprinkles and save the rest to add on top.
Transfer to Your Baking Dish
Add the batter to your prepared baking dish and use a spatula to spread it out. Add the rest of the sprinkles on top.
Bake on the top rack at 350°F for 25-30 minutes until firm.
How to Store Rainbow Sprinkle Brownies
Cover your fudgy brownies or store them in an airtight container to keep them fresh. At room temperature, these chocolatey squares will stay delicious for 3-4 days.
If you want to extend the life of your colorful brownies, you can freeze them for up to 4 months in an airtight container. Just allow them to thaw at room temperature before biting into them.
