Ghost Apples Tips and Tricks

About Yes! Apples

As a champion of eco-friendly practices, I love supporting brands that prioritize sustainable practices.

Yes! Apples is New York-grown, woman-owned, family-farmed, and sustainably-driven. They partner with experienced growers throughout New York state to bring customers fresh and delicious apples!

Notably, Yes! Apples participates in 1% for the Planet, whereby they donate 1 percent of proceeds from selected sales to environmental organizations across the globe that the company is interested in supporting.

In this Halloween Caramel Apple recipe, I used the SweeTango® variety, which is both sweet and tangy with hints of citrus, honey, and spice. The tasting notes are bright and nutty, with undertones of rose and caramel, making them perfect for caramel apples!

SweeTango® apples are available from September to February and can be found at a retailer near you or can be purchased directly from their website and delivered to your door.

Set Yourself Up for Success

Start by cleaning and drying your apples. Remove the sticker and rinse the apples clean, rubbing the outside. Make sure they are completely dry before moving forward.

Line a baking sheet with wax paper (preferred) or parchment paper.

Then, add a skewer or popsicle stick to the top of your caramel apple — this is crucial to both making and enjoying your apple! I prefer a popsicle stick because it is sturdy and the perfect size.

I used these reusable popsicle sticks, but any will do. Stick it through the top of your apple, right next to the stem. You want your popsicle stick about 2 inches deep, enough so that you can easily hold the full weight of the apple up by the stick.

Coat Your Apples in Caramel

Start by melting your caramels. Use the biggest mixing bowl you have so you have plenty of room to dunk your apples. Add the chewy caramels and heavy cream to the bowl, and microwave on high for 45 seconds.

Stir with a fork. Then, continue to microwave in 30-second intervals, stirring in between until smooth. This is usually achieved in just 2 or 3 intervals.

Working one at a time, lift your apples by the stick and dip them into the caramel. You may need to tilt your bowl to completely submerge the apple in the caramel. Spin the apple on its axis until it’s completely coated in a layer of caramel.

If you’re having trouble reaching the top, you can use a spoon to drizzle caramel over any spots you missed. Then, lift the apple and let any excess caramel run off.

Repeat for all four apples, lining them up on your prepped baking sheet. If need be, you can re-heat the caramel to keep it loose and melty. It should only need about 20 seconds in the microwave on high.

Once all four caramel apples are completely coated and lined up on your baking sheet, place them in the refrigerator for at least 30 minutes to firm up.

Coat in White Chocolate Next

Once the caramel has had a chance to firm up, it’s time for the white chocolate layer to turn these delicious apples into ghosts for Halloween!

Add the white chocolate chips to a large microwave-safe bowl. Microwave on high in 30-second intervals, whisking in between, until completely melted and smooth.

You may notice that melted white chocolate is a little on the thicker side but resist the urge to add any oil. Working with the pure white chocolate will give you a much better texture when it’s set.

Working quickly, use the same technique as you did with the caramel to add an outer layer of white chocolate to your apple. Again, you can reheat the white chocolate and/or use a spoon as needed.

Line the Halloween apples up on the baking sheet and place them back in the refrigerator for about 10 minutes to solidify.

How to Transform Your Apples into Ghosts!

Now for the fun part! Once your white chocolate has hardened, add the dark (or milk) chocolate chips to a bowl. You guessed it! We’re going to melt them in the microwave on high in 30-second intervals, whisking in between until smooth.

Then, you can use a toothpick to use the melted chocolate as edible paint and make two oval eyes and a slightly larger oval mouth.

This design is super simple and achievable, even if you don’t consider yourself artistic. If you don’t have any toothpicks, you can easily use your finger! Just make sure the chocolate has had time to cool—don’t burn yourself!

How to Properly Store Your Caramel Apples for Halloween

The best way to store your caramel apples is in an airtight container, Ziploc bag, or reusable storage bag in the refrigerator. They’ll stay fresh this way for up to a week.

I like to remove them from the refrigerator about 30 minutes before enjoying to allow them to come to room temperature, but you can also enjoy them cold.

You can also freeze caramel apples for up to 6 months, though it may alter the texture of the apples itself. If you would like to freeze them, do so in an airtight container or freezer bag. Thaw overnight in the fridge before enjoying.
