Domestic arugula production in the U.S. relies heavily on chemicals and disruptive irrigation to grow. Organic arugula on a large scale alleviates the use of chemicals, but still requires plowing and disrupting the soil to produce.
That being said, local and organic arugula from smaller producers is undoubtedly the most responsible way to source arugula.
