This Pasta with Pumpkin Sauce is quick and easy to make, easy to clean up, and will feed the whole family! It’s hearty, flavorful, and cozy.

One-Pot Pasta with Pumpkin Sauce
🎃16 ounces short pasta (like penne, ziti, rigatoni, or farfalle)
🎃 2 tablespoons olive oil
🎃 4 cups vegetable broth (or chicken broth)
🎃 15 ounces pumpkin puree (1 can)
🎃 ¼ teaspoon salt
🎃 ⅛ teaspoon black pepper
🎃 ¼ teaspoon nutmeg
🎃 2 tablespoons unsalted butter
🎃 ½ ounce fresh sage
🎃 ⅓ cup grated Parmesan cheese
🎃 ½ cup milk (dairy on unsweetened plant-based)

Method
🎃 Add the pasta, vegetable broth, pumpkin puree, olive oil, salt, pepper, and nutmeg to a large pot over high heat and stir. Cover and bring to a rolling boil, then turn heat down to medium to simmer.  🎃 Cover and simmer over medium for 13-15 minutes, stirring every 3-5 minutes with a wooden spoon, until pasta is al dente. As you stir, scrape the bottom of the pot to ensure the pasta doesn’t stick.  🎃 Meanwhile, finely chop the sage. Remove the pasta from heat and add the butter, sage, and Parmesan cheese. Stir to coat, allowing the residual heat to melt the butter.  🎃 Slowly add the milk to thin out the sauce, about 1 tablespoon at a time until you achieve your desired consistency. You may not need all ½ cup.  🎃 Serve hot with a little extra grated Parmesan and sage for garnish. Enjoy!

Pumpkin Spice Hot Chocolate combines the warmth of hot cocoa with the aromatic spices of pumpkin pie, and earthiness of real pumpkin.

PS Hot Chocolate
-2 cups milk of choice (dairy or unsweetened plant-based)
-⅓ cup dark chocolate chips
-2 tablespoons pumpkin puree (see notes)
-½ teaspoon pumpkin pie spice
-2 tablespoons granulated sugar
-1 tablespoon cocoa powder

Method
-To a pot or large saucepan, add the milk and chocolate chips over medium heat. Continue to heat, whisking frequently until chocolate chips are melted and integrated into the milk (about 3-5 minutes). -Add the pumpkin puree, pumpkin pie spice, granulated sugar, and cocoa powder and continue to heat and whisk, until your hot chocolate is smooth with no lumps. -Garnish and serve hot immediately.

This Baked Goat Cheese Pasta is a veggie-packed creamy pasta dish that comes together in less than 45 minutes and with just one dish!

Ingredients
-8 ounces baby bella or white button mushrooms
-1 large shallot
-3 cloves garlic
-5 ounces (1 cup) petite peas (fresh or frozen)
-1 tablespoon olive oil
-1 teaspoon dried oregano
-½ teaspoon garlic powder
-½ teaspoon salt
-½ teaspoon black pepper
-16 ounces fettuccine or linguine
-4 cups vegetable broth
-8 ounces goat cheese

Method
-Preheat your oven to 400°F and slice your mushrooms, dice your shallot, and mince your garlic.
-To a large, oven-safe 9 x 13-inch casserole dish, add the mushrooms, shallot, garlic, and peas.
-Pour olive oil, oregano, garlic powder, salt, and pepper on top of your veggies and use clean hands or two spoons to toss, ensuring the oil and seasonings are distributed throughout the dish.
-Pour the vegetable broth on top and place your pasta in the dish. All of the pasta should be submerged in the broth.
-Add your goat cheese on top and cover the dish with aluminum foil.
-Bake for 15 minutes. Then, remove from the oven, remove the foil and stir well, breaking down the baked goat cheese and making sure no noodles are stuck together.
-Bake for another 15 minutes uncovered. Remove from the oven and place on a cooling rack or heat-safe surface. At this point, you will still see a lot of liquid. Allow the baked goat cheese pasta to cool for at least ten minutes, stirring occasionally, until goat cheese sauce thickens. Enjoy!

These Parmesan Crusted Brussels Sprouts consist of tender, roasted Brussels sprouts with a crispy, golden Parmesan crust.

Ingredients
-1 pound brussels sprouts
-2 tablespoons olive oil
-½ teaspoon salt
-½ teaspoon black pepper
-3 tablespoons salted butter
-¼ cup Parmesan cheese
-¼ cup Panko breadcrumbs

Method
-Preheat your oven to 425°F. -Prep your brussels sprouts by trimming the ends off and slicing them in half lengthwise. -Add your prepared brussels sprouts to a large baking sheet. Add the olive oil, salt, and pepper, and toss to coat. Roast on the top rack of the oven for 15 minutes. -Meanwhile, add the butter to a microwave-safe bowl and melt it in the microwave on high. Start with 30 seconds, then stir. If it’s not melted after 30 seconds, continue to heat in 20-second intervals until its liquefied.  -Add the Parmesan and Panko to the melted butter and mix with a fork to form your Parm Crust.  -After 15 minutes, remove the brussels sprouts from the oven and use a spatula to push all of them to the center of the pan, so they are all touching, but still in a single layer. -Use clean hands to crumble the Parmesan-Panko-butter mixture on top of the brussels sprouts.  -Roast again on the top rack for 10 more minutes until the brussels sprouts are tender and the Parmesan crust is crispy and golden brown. Serve hot.

This Banana Bread in a Mug has a moist texture, plenty of fruity flavor, and aromatic cinnamon to tickle your taste buds in just 5 minutes!

Ingredients
-½ large overripe banana
-2 tablespoons light brown sugar (tightly packed)
-1 teaspoon vanilla extract
-¼ cup all-purpose flour
-¼ teaspoon baking powder
-⅛ teaspoon salt
-¼ teaspoon cinnamon
-1 tablespoon milk (dairy or unsweetened plant-based)
-tablespoons oil (vegetable, canola, grapeseed, or coconut oil in liquid.

Method
-To a standard 8- or 10- ounce mug, add the banana and use a fork to press down to mash it until it is almost completely liquefied.  -Add the brown sugar and vanilla extract and use the fork to combine with the banana.  -Next, add the flour, baking powder, salt, and cinnamon and mix again with the fork, ensuring there are no lumps.  -Finally, add the oil and milk and slowly mix until the liquid is integrated and the banana bread batter is smooth.  -Microwave on high for 90-seconds, then allow the mug banana bread to sit in the microwave for an additional 1 minute. If the center still seems too undercooked, you can microwave it for an additional 8-12 seconds. Enjoy!
