Meatless Monday Challenge

Eggs are a common component of any protein-packed breakfast and are often used in baked goods as a leavening agent or a binder.

As an environmental scientist, I do recognize that eggs have a higher environmental footprint, so you will often see the option to substitute a flax egg in many of our recipes.

That being said, there are ways you can minimize your impact and still enjoy eggs. Look for pasture-raised eggs (over free-range or cage-free) to support agriculture that is less reliant on chemicals and fossil fuels.

And more importantly, save the eggs for when they really count! Like in this Smoked Salmon Eggs Benedict, Naan Breakfast Pizza, or Lox and Schmear Omelet. Find all our favorite egg recipes here.
