Eggs

Eggs are a common component of any protein-packed breakfast and are often used in baked goods as a leavening agent or a binder.

As an environmental scientist, I do recognize that eggs have a higher environmental footprint, so you will often see the option to substitute a flax egg in many of our recipes.

That being said, there are ways you can minimize your impact and still enjoy eggs. Look for pasture-raised eggs (over free-range or cage-free) to support agriculture that is less reliant on chemicals and fossil fuels.
