Garlic

As an environmental scientist, I am always trying to highlight sustainable ingredients. Garlic, when sourced locally, non-GMO and organic, is considered a sustainable crop.

It is important to note that over the last decade, the demand for garlic has skyrocketed, causing a shift in the source for most garlic in the U.S. Close to 90% of garlic sold in the U.S. is grown overseas and imported, giving it a heavier carbon footprint.

This means that garlic is a crop that is especially important to source locally in order to obtain it sustainably.
