As an environmental scientist, I do recognize that certain honey harvesting and manufacturing processes are extremely harmful to our environment and our honeybees, but there are ways to minimize your impact.
Try buying raw, locally sourced honey. Generally, smaller-scale honeybee operations harvest honey in the fall, when the bees produce it in excess.
Using sustainably sourced honey as a sweetener may actually have a much lower impact than artificial sweeteners that contribute to a lot of pollution.
