As an environmental scientist, I am always trying to make the most of ingredients. Pumpkins are often carved for Halloween and used for Fall decor, but then, unfortunately, end up in the landfill, contributing to food waste.
But purchasing organic pumpkins locally, in-season, and with the intent to eat them will reduce your environmental impact.
