This recipe for Tableside Guacamole at home gives you restaurant-quality guac in your own kitchen with just a few fresh ingredients and spices. What are you guys making this weekend??

Tableside Guacamole
🥑½ large tomato (globe, beefsteak, or slicing tomato)
🥑 ¼ large red onion
🥑 2 large ripe haas avocados
🥑 1 tablespoon lime juice (½ lime)
🥑 ¼ teaspoon cumin
🥑 ¼ teaspoon salt
🥑 ¼ teaspoon black pepper
🥑⅛ teaspoon cayenne pepper (or more depending on desired spice level)
Optional Flavor-Boosting Add-ins
🥑½ ounce fresh cilantro (stems and leaves, chopped)
🥑2 whole jalapeno peppers (seeded and diced)
🥑1 clove garlic (minced)
🥑¼ cup fresh mango or pineapple (diced)

Method
🥑Start by dicing your tomato and red onion. If you're using any optional add-ins, prep them now, too.  🥑Add the diced onion, tomato, and salt (and any optional add-ins if using) to a mortar and use a pestle to mash, extracting the liquid and crushing into small, fine pieces.  🥑Add the avocado flesh to the mortar and use the pestle again to smash and integrate into the salted and crushed tomato and onion.  🥑Add the lime juice, black pepper, cumin, and cayenne pepper. Use a fork to stir until creamy and smooth. Serve immediately with tortilla chips.

These Baked Sheet Pan Pancakes give you all the taste and texture of classic pancakes without having to pan-fry each individual one!

Ingredients
🥞 2 tablespoons unsalted butter (melted)
🥞 1 ½ cups all-purpose flour
🥞 ¼ cup light brown sugar (tightly packed)
🥞 2 teaspoons baking powder
🥞 ½ teaspoon salt
🥞 2 large eggs
🥞 2 cups milk of choice
🥞 2 teaspoon vanilla extract
nonstick cooking spray (as needed)
Optional Add-ins
🥞 fresh fruit, cut into bite-sized pieces (like berries, apples, bananas, mango, or pineapple)
🥞 chocolate chips (semi-sweet or dark chocolate)
🥞 peanut butter, nutella, or pumpkin puree (swirled on top)
🥞 sprinkles or fruity pebbles
🥞 pumpkin pie spice or cinnamon

Method
🥞Preheat your oven to 425°F and prep a baking sheet with nonstick cooking spray of choice. For thinner, more authentic pancakes, use a 12 x 18-inch baking sheet (preferred). For thicker, fluffier pancakes, use a 13 x 9-inch baking sheet.  🥞 In a small microwave-safe dish, microwave the butter on high for 30 seconds until completely melted. Set aside to cool.  🥞 In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt, ensuring there are no lumps.  🥞 Add the eggs, milk, and vanilla extract, and whisk again until smooth. Continue to whisk as you add the cooled melted butter, whisking until the butter is seamlessly integrated. You will have a very thin pancake batter.  🥞 Pour your batter onto your prepped baking sheet and carefully lift and tilt the pan back and forth, left and right to spread the batter around the baking sheet evenly. If you are using any optional add-ins, place those on top of your batter now.  🥞 Bake for 15 minutes until cooked through and top starts to bubble and turn golden brown. Enjoy hot with maple syrup!

This Easy Cheesy Pasta Bake is a family favorite for the ultimate comfort food dish. It’s filling, delicious, and oh... did I mention cheesy?

Ingredients 🧀1 large yellow onion, diced 🧀 8 ounces mushrooms, chopped
🧀 2 tablespoons olive oil
🧀 ¼ teaspoon salt
🧀 ¼ teaspoon black pepper
🧀 ¼ teaspoon crushed red pepper (optional)
🧀 16 ounces Penne Rigate (or any other short pasta)
24.5 ounces marinara or spaghetti sauce (3 cups)
🧀 4 cloves garlic, minced
🧀 4 ounces cream cheese
🧀 8 ounces Italian shredded cheese blend
🧀 4 ounces shredded mozzarella
🧀 1 handful Fresh basil for garnish

Method
🧀 Preheat your oven to 375°F and boil about 10 cups of water for your pasta.
🧀 Add the mushrooms and onions to a large pan over medium heat with olive oil, salt, pepper, and crushed red pepper (optional). Cook until the mushrooms shrink and the onions turn translucent—about 5 minutes.
🧀 Once water is boiling, cook pasta al dente, according to the directions on the box (usually about 6-10 minutes). Strain and set aside to dry completely.
🧀 Add the marinara sauce to the mushrooms and onions to cook off any excess liquid in the sauce. Turn the heat source down to low. and stir frequently to avoid splatter.
🧀 Once your sauce thickens, add the cream cheese, shredded Italian blend cheese, and minced garlic and stir over low heat to combine.  🧀 Add the cooked pasta to the sauce and remove it from heat. Stir until the pasta is coated.
🧀 Transfer the pasta to a 9 x 13-inch glass baking dish. Top with an even, thin layer of mozzarella. 🧀 Bake for 25 minutes or until the cheesy top is golden brown. Garnish with fresh basil and enjoy with family and friends, or keep for up to 5 days in the refrigerator.

Roasted Sweet White Vinegar Figs (serves 2):
-8 ounce fresh black mission figs
-2 tablespoons @carandinius Bianca Sweet White Vinegar
-1 tablespoon light brown sugar
-1 1/2 cups plain Greek Yogurt
-2 tablespoons honey
-fresh thyme for garnish (optional)

Method:
-Preheat the oven to 425 °F.
-Slice the figs in half lengthwise and place them on a small baking sheet.
-Drizzle @carandinius Bianca Sweet White Vinegar over figs and sprinkle on brown sugar.
-Roast for 5 minutes until vinegar and brown sugar caramelize on figs, then remove from the oven and let sit for 10 minutes to cool.
-Meanwhile, fill two bowls with 3/4 cup Greek yogurt and swirl in 1 tablespoon of honey into each bowl.
-Serve the roasted figs on top of the yogurt and garnish with fresh thyme (optional).

These 30 Minute Salmon Tacos with Greek Yogurt Sauce are fresh, slightly spicy, and have a subtle sweetness from the coconut rice.

Ingredients
Coconut Rice 🌮 1 cup Basmati Rice
🌮 13.66 ounces (1 can) coconut milk
🌮 1 teaspoon coconut oil (optional)
Salmon Tacos
🌮 ½ large red onion,sliced
🌮 1 cup corn kernels (canned, frozen, or freshly cut off the cob)
🌮 2 tablespoon olive oil
🌮 3 tablespoons taco seasoning
🌮 15 ounces salmon
🌮 8 small flour tortillas
🌮 1 large ripe avocado
Greek Yogurt Sauce for Tacos
🌮 2 tablespoons lime juice (1 lime)
🌮 5.3 ounces (1/2 cup) Greek Yogurt
🌮 2 tablespoons mayonnaise (optional to thicken sauce)
🌮 ½ teaspoon cumin
🌮 ¼ teaspoon cayenne pepper
🌮 3 tablespoons fresh dill, chopped

Method

Coconut Rice
🌮in a small pot, bring rice, coconut milk, and coconut oil (optional) to a boil cover, and turn the heat all the way down to low. Simmer on low for about 20 minutes.

Salmon and Veggies
🌮Preheat your oven to 400°F.  🌮Add the onion and corn to a large baking sheet with 1 tablespoon of olive oil and roughly half of the taco seasoning and toss to coat. Roast for ten minutes. 🌮Pat salmon dry and slice into bite-sized cubes. 🌮Add the salmon cubes to a mixing bowl with the remaining 1 tablespoon of olive oil and the rest of the taco seasoning and toss.
🌮Add salmon to the baking sheet with the corn and onion and roast for an additional 8 minutes or until (internal temp of salmon should be 125°F.) 
Greek Yogurt Sauce for Tacos
🌮 Squeeze lime juice into small mixing bowl. 🌮Add the Greek yogurt, mayonnaise (optional), cumin, cayenne pepper, and chopped dill to the bowl and whisk to combine. 
Assembling Your Tacos
🌮Add a thin layer of coconut rice to tortillas. 🌮Top with a generous amount of corn, red onion, and salmon. 🌮Finish with sliced avocado and Greek yogurt sauce.
