You can use salted or unsalted butter or plant-based buttery spread. Olive oil works, too if you prefer, but I recommend butter for the extra flavor it brings.
I used sharp cheddar cheese, but any melty cheese works here. Some other favorites are Gouda, Havarti, and/or Swiss.
Any bread works, too. I used sourdough, but anything from a bagel to a brioche bun to a hearty wheat bread and everything in between works!

How to Make a Scrambled Egg Sandwich
In a pinch, you can crack the eggs directly into the pan and scrambled them in the pan. I totally understand the urge to want to dirty one less bowl.
However, for the very best results, I highly recommend cracking your eggs into a shallow bowl with the salt and pepper and beating them with a fork.
Adding salt to the eggs before heating them inhibits their proteins from binding too tightly as they heat, resulting in softer, creamier scrambled eggs.
Melt the butter in the pan, then add the eggs and let them sit over the heat until the edges start to cook. Then, use a spatula to push the eggs around in a circular motion moving inward, until the eggs are cooked. Then, set them aside.
Note: I’ve seen a lot of videos circulating which recommend adding the egg to the pan and placing the bread on top. While I admit this is very efficient, I think it’s worth taking the extra few minutes to toast both sides of the bread.
Once your pan is empty, add the rest of the butter and two slices of bread. Give the bread a few minutes to toast, then flip them. Add the cheese and eggs to one piece of toast.
Once the free piece of bread is golden brown on both sides, stack it on top to complete your sandwich, and allow it to sit on the pan until the cheese is nice and melty.

You can easily make this scrambled egg sandwich ahead of time, wrap it or store it in an airtight container, and keep in the fridge for up to 5 days.
Then, when you’re ready to eat it, wrap it in aluminum foil and heat it in your preheated 350°F oven for 10-15 minutes.
You can use this same reheating technique for leftovers.

- 2 large eggs
- ¼ teaspoon salt
- ⅛ teaspoon black pepper
- 2 tablespoons butter of choice (salted or unsalted)
- 2 slices bread of choice (I used sourdough)
- 2 slices cheddar cheese (or other melty cheese of choice)
Instructions
- To a mixing bowl, add the eggs, salt, and pepper. Use a fork or whisk to beat the eggs until the whites and the yolks are well-combined.2 large eggs, ⅛ teaspoon black pepper, ¼ teaspoon salt
- To a frying pan over medium heat, add about 1 tablespoon of butter and allow it to melt. Tilt the pan back and forth until the pan is coated in butter.2 tablespoons butter of choice
- Add the eggs to the center of the hot pan. Wait about 30 seconds until the edges start to cook, then use a spatula to push the eggs around the pan. As they become firm, start to fold the outer edges inward, bringing the scrambled eggs into the center of the pan and shaping them until they are roughly the same shape and size of your bread. Then, slide the eggs off the pan and set aside.
- Add the pan back to the heat and add the rest of the butter. Place two slices of bread in the butter and leave it there for a few minutes until it turns golden brown. Then, flip the bread.2 slices bread of choice, 2 tablespoons butter of choice
- Add the cheese and the egg to one slice of the bread (to the toasted side) and continue to cook over medium heat until the second side of the bread is toasted.
