I’ve been known to hack a s’more without a campfire (check out these Air Fryer S’mores), and this is by far my easiest way yet to reinvent the awesome flavor trio!
Super easy to make, only 3 ingredients required, and the microwave and refrigerator are the only appliances needed for this dessert recipe with mini marshmallows. All things I can stand behind as a mom-on-the-go who loves a sweet treat!
S’mores Bark Ingredient Highlights
When it comes to quick and easy dessert ideas, you can bet a 3-ingredient recipe is at the top of my list! This recipe is not at all fussy, but just a few notes on the ingredients:
I like using dark chocolate just because it’s always my personal preference, but traditional s’mores do use milk chocolate, so I fully support the use of either.
I use chocolate chips because they melt easily and I always have them on hand, but if you’d rather use a bar of chocolate, just make sure you chop it up.
How to Make S’mores Bark
I Always Prep My Ingredients First
Melt your chocolate and crush your graham crackers.
Add the chocolate chips to a microwave-safe bowl and microwave in 30-second intervals, whisking in between. It’s best not to overheat the chocolate. I usually only have to microwave the chips for 1 minute total to get them melted and smooth.
As for the graham crackers, I typically just put them on a plate or baking tray and crush them with a rolling pin or wooden muddler. For less mess, you can add them to a storage bag and crush them in there.
Ideally, you’ll end up with some graham cracker crumbs, and some larger chunks for your chocolate bark.
How I Assemble Chocolate Bark
Make sure to line your baking sheet, preferably with wax paper, but parchment paper works, too.
Pour your melted chocolate out onto the lined baking sheet. Use a spatula to spread it out in a thin layer, roughly 1/2-inch thick.
Then, add the mini marshmallows sporadically throughout the chocolate. Next, sprinkle the graham cracker bits on top.
Use your hand to lightly press the s’mores toppings into the melted chocolate, ensuring they will stick when the chocolate hardens around them to form the bark.
Then, add the bark to the refrigerator to set, for about 2 hours. If you’re in a rush, you can stick in the freezer for 20-30 minutes.
How I Break and Store My Bark
Once the chocolate is solid, just pick up the bark and break it into individual pieces, as big or small as you want. You can then enjoy it right away or store it like this in an airtight container.
This easy dessert recipe will last up to a week at room temperature or 2 weeks in the refrigerator.

- ½ cup mini marshmallows
- 2 graham crackers

- Line a large baking tray with wax paper (preferred) or parchment paper. Crush the graham crackers with a rolling pin so that you're left with some graham cracker crumbs and some larger pieces.2 graham crackers
- Add the chocolate chips to a microwave-safe bowl. Microwave on high in 30-second intervals, whisking in between until smooth.12 ounces chocolate chips
- Pour the melted chocolate into the center of the pan and use the spatula to spread it out into a thin, even layer, roughly ½-inch thick.
- Add the mini marshmallows and graham cracker bits sporadically to the chocolate and use the palm of your hand to lightly press the toppings into the chocolate.½ cup mini marshmallows
- Place the s'mores bark in the refrigerator for about 2 hours to set. If you're in a rush, you can place it in the refrigerator for 20-30 minutes instead. Once it's firm, break it into individual pieces, any size you like. Enjoy!
