This Loaded Meatless Baked Ziti is packed with vegetables, making it hearty and flavorful. Swimming in creamy ricotta marinara sauce and topped with melty cheese, this comfort food dish is baked to perfection. Plus, it’s the perfect clean-out-the-fridge meal as it works with any and every vegetable and green!

Easy Veggie-Packed Meatless Baked Ziti
-1 large yellow onion
-8 ounces mushrooms
-1 large zucchini and/or any other vegetables you please
-4 cloves garlic
-2 cups spinach and/or other greens
-2 tablespoons olive oil
-½ teaspoon salt
-½ teaspoon black pepper
-16 ounces ziti
-24 ounces marinara or spaghetti sauce
-15 ounces whole or part-skim ricotta
-8 ounces shredded Italian blend cheese

-Preheat your oven to 350°F and cook ziti al dente according to the directions on the box.
-Prep your vegetables by dicing the zucchini and onion, slicing the mushrooms, and mincing the garlic.
-Add the prepped veggies to a large saucepan or pot with spinach, olive oil, salt, and pepper. -Cook over high heat until the liquid from the veggies releases and the onion turns translucent (10-15 minutes).
-Add the marinara sauce to the saucepan and continue to cook for another 2 minutes, stirring frequently, until the sauce thickens.
-Remove from heat and stir in the ricotta.
-Add your cooked pasta to the veggie-packed sauce and stir to coat. Transfer the ziti and sauce to a 9 x 13-inch baking dish.
-Layer the shredded Italian cheese blend on top, completely covering the ziti with cheese.
-Bake for 25-30 minutes until the top layer of cheese is completely melted and starts to brown. Option to garnish with fresh basil. Enjoy! #meatlessmeals #bakedziti #cheesy #pastabake

These Blueberry Chocolate Chip Muffins combine the fruity, slightly tart taste of fresh blueberries with decadent chocolate chips held together in a succulent, moist muffin! One bowl and less than 30 minutes 🥰

-1 ½ cups all-purpose flour
-¾ cup granulated sugar
-2 teaspoons baking powder
-½ teaspoon salt
-½ cup oil (coconut in liquid form, vegetable, or canola)
-1 large egg
-½ cup milk
-2 teaspoons vanilla extract
-6 ounces blueberries (~1 cup)
-¾ cup dark chocolate chips
-1 tablespoon sugar in the raw (optional to sprinkle on top before baking)

-Preheat your oven to 400°F and spray or line your muffin tin.
-In a large mixing bowl, add flour, sugar, baking powder and salt and whisk to combine.
-Add the oil, egg, milk, and vanilla extract and use a whisk or hand mixer on low to combine the ingredients until the batter is smooth, careful not to over-beat.
-Add the blueberries and chocolate chips to your muffin batter. Use a spatula to fold in the

This super-simple Bang Bang Sauce brings bold flavor with just 3 ingredients. Inspired by Bang Bang Shrimp at Bonefish grill, you can quickly and easily recreate it at home!

3-ingredient Bang Bang Sauce
-⅓ cup mayonnaise (or Greek yogurt)
-3 tablespoons Thai Sweet Chili sauce
-2 tablespoons sriracha

To a small mixing bowl, add the mayonnaise, sweet Thai chili sauce, and sriracha and whisk to combine. Taste and add more Sriracha if you want more spice. Enjoy!

Smoked Salmon Flatbread (makes 2)
2 pieces naan bread
2 cloves garlic, minced
1 teaspoon chopped fresh dill + extra for garnish
½ cup full-fat ricotta
¼ teaspoon salt
¼ teaspoon black pepper
½ cup shredded mozzarella
½ cup shredded Parmesan
4 ounces smoked salmon

Method
-Preheat the oven to 425°F and place two naan breads on a large baking sheet.
-Stir together the ricotta, garlic, dill, salt, and pepper.
-Spread the ricotta mixture on the naan in an even layer.
-Top the ricotta with mozzarella and Parmesan cheese.
-Bake for 8-10 minutes until the cheese is nice and melted.
-Add the smoked salmon on top and finish with extra fresh dill. Slice and enjoy with a glass of @stfranciswinery Chardonnay.
