I’m a HUGE mac and cheese fan, so I knew I had to make this recipe! It’s so creamy with the addition of brie, I never would’ve thought of that... it was perfect!

Cook macaroni to al dente according to the directions on the box. Once cooked, drain and set aside.

Pasta water with no salt added is actually super starchy and nutrient-rich, making it perfect for watering your plants!

In the pot you cooked the macaroni in, add the butter and flour over low heat and whisk until smooth.

Add 1 cup of milk and whisk until well combined.

Add both cheeses and spices and continue to stir over low heat until all the cheese is melted and your sauce is creamy and smooth.

Add the cooked macaroni back to the pot with the sauce and stir until coated. Assess the consistency, and add more milk if need be.

Taste and add more salt and pepper if needed. Garnish with scallions as an added option. Enjoy!

Store leftovers in an airtight container for up to 5 days. You can also freeze it for up to a year.

To reheat, add about 2 tablespoons of milk per 1/2 cup serving and heat on the stove over low heat or covered in the microwave until heated thoroughly.
