This Tahini Pasta with Toasted Walnuts is a zesty, creamy, and nutty pasta with a crunchy on top. It comes together in 15-20 minutes and only requires one pot.

One-pot meals are great because it means less clean-up. Less clean-up is not only quicker and easier, but means you will lower your water consumption!
Toast the walnuts in the oil in a large pot over medium heat for 5 minutes. Remove and set aside, leaving the oil in the pot.
Add the minced garlic to the pot with the oil, and fry on medium heat for 2-3 minutes until fragrant.
Add the zest and juice of 1 lemon, and vegetable broth to the pot.
Snap the angel hair pasta in half, carefully add it to the pot, and ensure the pasta is completely submerged.
Cover and cook for 5 minutes, tossing halfway between to make sure the pasta noodles do not stick to the bottom of the pot or each other.
Remove cover and turn the heat all the way down to low before adding your Tahini. Stir to coat and add salt and pepper to taste.
Add the toasted walnuts back to the pot with the pasta and serve immediately. Enjoy!
If you like your pasta extra zesty, keep an extra lemon on hand and add extra lemon juice and zest to taste.
