This Strawberry Pineapple Mojito brings fruity, tropical flavors to your classic minty mojito for the ultimate fruit-forward cocktail.

Ingredients

  • 2 large strawberries, diced
  • ¼ cup chopped pineapple chunks
  • 1 sprig mint
  • 1 ounce lime juice 1 oz usually = juice of 1 lime
  • 1 ounce pineapple juice or simple syrup, or 1 tablespoon granulated sugar *** see notes below
  • 2 ounces white rum
  • 2 ounces club soda

Instructions

  • To a highball glass, add mint, strawberries, and fresh pineapple. Use a wooden spoon or muddler to crush the fruit and express the oils from the mint.
    *If you are using granulated sugar instead of simple syrup or pineapple juice, add the sugar now and muddle it with the mint, strawberry, and pineapple.
    2 large strawberries, diced, 1 sprig mint, ¼ cup chopped pineapple chunks
  • Add the lime juice, pineapple juice (or simple syrup), and rum and stir to combine.
    1 ounce lime juice, 1 ounce pineapple juice or simple syrup, or 1 tablespoon granulated sugar, 2 ounces white rum
  • Fill your glass with ice and pour club soda on top.
    2 ounces club soda
  • Garnish with a strawberry slice, lime wedge, and extra mint. Enjoy cold.

Notes

  • *** Deciding whether to use sugar, simple syrup, or pineapple juice will depend on how sweet you want your cocktail. For a very subtle sweetness, use pineapple juice. For a sweeter cocktail use granulated sugar (the sweetest option!) or simple syrup.
