Instructions
Preheat your oven to 325°F.
Whisk together honey, coconut oil, and seeds of choice in a medium-sized bowl.

Add oats and stir until coated in honey, oil, and seeds.
2 cups old fashioned oats
Spread your mixture evenly onto a baking sheet covered with parchment paper and sprinkle cinnamon on top. Bake for about 20 minutes, tossing halfway through.
1 teaspoon cinnamon
Remove from the oven and allow to cool. Add the coconut and stir.
½ cup shredded coconut
Serve with yogurt, make a parfait, or munch on its own!
Notes
Check your granola at 18 minutes—you don't want it to burn! 20 minutes is perfect in my oven, but a minute over it gets a little charred. Everyone's ovens are slightly different. That also means you may need to bake it for a couple more minutes if it's not crispy after 20.
This granola recipe is a perfect base to really any granola. Throw in your other favorite ingredients in step 5. Raisins, nuts, dried fruit- you can customize this recipe so many ways!
If you want your coconut toasted, add it to your baking sheet 5 minutes before removing it from the oven.
