Instructions
To a highball glass, add mint, strawberries, and fresh pineapple. Use a wooden spoon or muddler to crush the fruit and express the oils from the mint. *If you are using granulated sugar instead of simple syrup or pineapple juice, add the sugar now and muddle it with the mint, strawberry, and pineapple.
2 large strawberries, diced, 1 sprig mint, ¼ cup chopped pineapple chunks
Add the lime juice, pineapple juice (or simple syrup), and rum and stir to combine.

Fill your glass with ice and pour club soda on top.

Garnish with a strawberry slice, lime wedge, and extra mint. Enjoy cold.
Notes
*** Deciding whether to use sugar, simple syrup, or pineapple juice will depend on how sweet you want your cocktail. For a very subtle sweetness, use pineapple juice. For a sweeter cocktail use granulated sugar (the sweetest option!) or simple syrup.
