Equipment

Ingredients

  • ½ cup coconut oil
  • ½ cup honey
  • 2 teaspoons matcha powder
  • 3 cups old fashioned oats
  • ¼ cup crushed walnuts optional
  • ¼ cup coconut flakes optional

Instructions

  • Preheat your oven to 300°F.
  • In a microwave-safe bowl, add coconut oil and honey. Microwave on high for 15 seconds until coconut oil is in liquid form, and you can easily combine the oil and honey with a fork.
½ cup coconut oil, ½ cup honey
  • Add the matcha powder to the warm oil/honey mixture and use a matcha whisk, fork, or regular whisk to combine, ensuring there are no clumps of matcha powder left behind.
    2 teaspoons matcha powder
  • Add oats, walnuts, and coconut flakes to a large mixing bowl and pour your matcha mixture overtop. Use a spatula to toss, coating the oats with the oil, honey, and matcha.
3 cups old fashioned oats, ¼ cup crushed walnuts, ¼ cup coconut flakes
  • Spread your granola onto a large baking sheet lined with parchment paper in an even layer and bake for 50-55 minutes, tossing halfway through. Enjoy!

Notes

  • This granola is more earthy and less sweet. If you like sweeter granola, you can add 1/4 cup of brown sugar in step 4 to ramp up the sweetness!
  • I use culinary grade matcha! If you're using ceremonial grade, consider adding a teaspoon less, as it's much stronger.
