Smoked Salmon Breakfast Bowl with Crispy Potatoes

This hearty and delicious smoked salmon breakfast bowl is packed with flavor and texture complete with crispy pan-fried potatoes and onions, egg, cream cheese, tomatoes, and everything but the bagel seasoning.

Ingredients

  • 12 ounces potatoes honey gold or new potatoes preferred
  • ½ medium yellow onion
  • 2 tablespoons olive oil
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 large eggs
  • 4 ounces smoked salmon
  • 5 ounces grape tomatoes
  • 2 ounces cream cheese
  • ¼ teaspoon everything but the bagel seasoning
  • 2 stems scallions aka green onion, optional

Instructions

  • Use a sharp knife to dice the potatoes, and peel and dice the half an onion. Get the olive oil hot in the pan over high heat for about 2 minutes.

  • Add the diced potatoes and onions to the hot oil. Add the salt and pepper and toss. Cook over high heat, tossing occasionally until the inside of the potatoes are tender and the outside is crispy.

  • Add the pan-fried potatoes and onions to two bowls and put the pan back over heat. If the pan needs a little more oil, add it now.

  • Fry (or scramble!) your eggs to your preferred temperature* and add to the bowl with your potatoes.

  • Complete your breakfast bowls with smoked salmon, halved grape tomatoes, a dollop of cream cheese, and everything but the bagel seasoning. Option to garnish with green onions.

Notes

  • *For over easy eggs, allow the egg to fry until the white is opaque. Then, remove your pan from the heat, flip the egg, and allow the residual heat on the pan to cook the second side of the egg for about 1 minute. 
  • *For over medium eggs, use the same technique, but this time, do not remove your pan from the heat. Once you flip the egg, allow the egg to cook on the second side over medium-low heat for about 1 minute.
