If you are making your pumpkin pie spice from scratch, mix together cinnamon, nutmeg, ginger, cloves, and all-spice first. If you are using storebought pumpkin pie spice, skip this step.
1 ½ teaspoons cinnamon, ½ teaspoon nutmeg, ½ teaspoon ginger, ¼ teaspoon cloves, ¼ teaspoon all-spice
Add water, brown sugar, and pumpkin pie spice to a small pot or saucepan and whisk to combine. Turn heat source on to medium and bring to a boil.

Bring temperature down to low and allow sugar, water, and spices to simmer for about 5 minutes, stirring occasionally until the sugar and spices are dissolved in the liquid.
Transfer to a heat-safe jar with a lid, allow to come to room temperature, and then store in the refrigerator for up to 1 month for use in coffee, cocktails, and baked goods!
