Preheat an oven to 375°F  Slice the baguette into 1/2 inch wide pieces. Add a thin coat of olive oil to both sides and place on a baking sheet.  Bake for 5 minutes (or until crispy).

Add ricotta, salt, and pepper to a medium-sized mixing bowl and use a hand mixer to whip until light and airy—about 2 minutes.

Add a generous amount of whipped ricotta to each piece of bread (use a piping bag for a prettier presentation!)
