Servings 8 truffles

Ingredients

  • cup heavy whipping cream
  • 1 tablespoon unsalted butter
  • 6.8 ounces dark chocolate 6.8 oz usually = 1 large bar
  • 2 ounces whiskey
  • 2 to 3 tablespoon cocoa powder

Instructions

  • Heat the cream and butter together either in a microwave-safe bowl for 1 minute and 30 seconds or over a double boiler until just simmering.
⅓ cup heavy whipping cream, 1 tablespoon unsalted butter
  • Meanwhile, finely chop your chocolate and add it to a large mixing bowl.
    6.8 ounces dark chocolate
  • Pour simmering cream and butter over the chopped chocolate and whisk until chocolate is melted. The cream and butter mixture should be hot enough to melt your chocolate. Continue to whisk until chocolate is melted and avoid reheating.
  • Add whiskey and stir until smooth. Cover with a clean kitchen towel and place in refrigerator to cool and harden—about 2 hours.
    2 ounces whiskey
  • Add cocoa powder to a shallow bowl or large plate. Once your chocolate/whiskey mixture has set, scoop out about 1 tablespoon of chocolate at a time, placing each scoop directly into the cocoa powder.
2 to 3 tablespoon cocoa powder
  • Roll the chocolate in the cocoa powder until it is completely covered, then pick it up and roll between clean hands to form a ball. Set aside and repeat until you have about 8-10 truffles.
  • Serve immediately or store in the refrigerator until ready to enjoy.

Notes

  • The butter and cream mixture needs to be hot enough to melt your finely chopped chocolate.
  • Use high-quality dark chocolate rather than milk or semi-sweet.
