Remove your kiwi from the skin and slice it into 4-6 chunks. Then, add it to a highball glass with the mint.
Use a muddler or wooden spoon to muddle the kiwi and mint, extracting the juices and oils.
Add lime juice, simple syrup, and white rum and stir.
Fill the glass with ice and top with club soda. Garnish with a lime wedge and extra mint and enjoy cold.
Notes
You can make your own simple syrup by heating sugar and water in a 1:1 ratio over the stove in a small pot until sugar is dissolved. Allow it to cool completely before using it in your cocktail.
I prefer fresh spearmint leaves for this recipe, but you can also use fresh peppermint!
If you don't like the idea of solids in your drink, you can opt to strain the juice extracted from muddling the kiwi and mint, instead of leaving it all in the glass!
