Ingredients

  • 3 whole bananas very ripe
  • 1 ½ cups whole wheat flour
  • 13.5 ounces coconut milk 13.5 oz usually = 1 can
  • ¾ cup coconut or brown sugar
  • ¼ cup coconut oil
  • 1 tablespoon flaxseed meal
  • 1 tablespoon vanilla extract
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • ¼ teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • 1 extra banana for topping - optional

Instructions

  • Preheat your oven to 350°F.
  • Peel your bananas and add them to your blender with all of the ingredients listed above. Blend on high until smooth.
    3 whole bananas, 1 ½ cups whole wheat flour, 13.5 ounces coconut milk, ¾ cup coconut or brown sugar, ¼ cup coconut oil, 1 tablespoon flaxseed meal, 1 tablespoon vanilla extract, 1 teaspoon baking soda, 1 teaspoon salt, ¼ teaspoon cinnamon, ¼ teaspoon nutmeg
  • Transfer batter to a lined or greased loaf pan. Slice an extra banana in half long ways, and place on top. Sprinkle a little bit of extra sugar on top of the raw banana (optional)

  • Bake for one hour until firm and fragrant.

Notes

  • Wait until your banana is super ripe and showing brown spots on the peel to get that best banana flavor in this bread.
  • If you do not have coconut sugar, it's best to substitute brown sugar.
  • If you are substituting all-purpose flour for whole wheat flour, use 1 & 1/4 cups.
