Preheat an oven to 425°F. Rinse the purple asparagus and break off the tough ends. The stalks will naturally break where the asparagus starts to get tough.
Spread the asparagus out on a large baking sheet and pour the olive oil on top. Use your hands to toss the asparagus to ensure each piece is evenly coated in oil.
Align asparagus on the baking sheet so they are not stacked on top of each other, and add salt and pepper.
Roast for 8-10 minutes, until the purple asparagus just starts to turn dark green. Add your toppings of choice and enjoy hot.
