These Vegan Pumpkin Chocolate Chip Cookies combine

These Vegan Pumpkin Chocolate Chip Cookies combine pumpkin and complimentary spices with classic chocolate chip cookie flavors to bring you the ultimate Fall cookie. Soft and not too cakey.

-¾ cup pumpkin puree
-⅓ cup coconut oil (in solid form)
-1 cup light brown sugar (tightly packed)
-1 ¾ cup all-purpose flour
-½ teaspoon baking soda
-1 teaspoon salt + more to sprinkle on top if desired
-2 teaspoons pumpkin pie spice
-1 cup dark chocolate chips

-Preheat your oven to 350°F and line with a reusable baking mat or parchment paper.
Add your pumpkin puree to a large mixing bowl and use a paper towel to blot the puree, removing excess moisture.
-Add the coconut oil and sugar to the bowl with the dehydrated pumpkin puree and cream together with a hand mixer on high (about 2-3 minutes).
-Add flour, baking soda, salt, and pumpkin pie spice and blend until combined.
-Fold in chocolate chips and use a large cookie scoop or heaping tablespoon to spread out cookies on a large, lined baking sheet.
-Bake for 10-12 minutes, until they just start to brown on top. Sprinkle with sea salt (optional) and let cool completely before enjoying. #pumpkinspiceeverything #pumpkinseason

This Pumpkin Spice Margarita brings fun Fall flavors to a typically more summery drink, making this uniquely warming marg the perfect Autumn treat!

-1 cup ice
-2 ounces blanco tequila
-½ ounce lime juice
-1 tablespoon pumpkin puree
-1 ounce pumpkin spice syrup
-1 lime wedge for garnish (optional)
-1 teaspoon pumpkin pie spice for rim (optional)

-Add a handful of ice, tequila, lime juice, pumpkin puree, and pumpkin spice simple syrup to a cocktail shaker or jar with a lid and shake until integrated (about 30 seconds).  -Garnish the rim of a margarita or lowball glass by wetting it with a lime and then dipping it into pumpkin pie spice (optional).
-Add ice to your rimmed glass and pour the contents of the cocktail shaker over the ice. Garnish with a lime wedge and cinnamon stick and serve ice cold.

You all know how much I Iove baking, and how important sustainability in the kitchen is to me! S’mores Cookies:
-½ cup unsalted butter, softened
-1 cup @floridacrystalssugar Regenerative Organic Certified® light brown sugar (tightly packed)
-2 teaspoons vanilla extract
-1 large egg
-1 ¾ cup all-purpose flour
-¼ teaspoon salt
-½ teaspoon baking soda
-¾ cup dark chocolate chips
-10 marshmallows
-2 graham crackers

Method:
-Preheat your oven to 375°F and line a baking sheet.
-To a large mixing bowl, add the butter and sugar. Use a hand mixer on high to cream together until light and smooth.
-Add the egg and vanilla extract and use your hand mixer on low to combine.
-Add the flour, salt, and baking soda and mix to combine, careful not to overbeat.
-Fold in the chocolate chips.
-Use a large cookie scoop or 2 heaping tablespoons of dough to form your cookies, adding them to the prepared baking sheet. Leave at least an inch of space in between each cookie. Use the palm of your hand to press the cookie dough down flat.
-Press a marshmallow into the center of each cookie, then fold the cookie dough around the marshmallow and roll the dough with your hands so that the marshmallow is hidden in the center of your round cookie dough ball.
-Crush the graham cracker into small pieces and push a handful into the top of each cookie.
-Bake for 8-10 minutes on the top rack. Enjoy!

These fudgy Funfetti Brownies are decadent, chocolatey, and chewy, with fun and colorful rainbow sprinkles! Super easy with only one bowl required!

-½ cup unsalted butter, softened
-1 tablespoon oil
-1 cup chocolate chips (dark or semi-sweet)
-1 ¼ cup granulated sugar
-2 large eggs
-2 teaspoon vanilla extract
-½ cup all-purpose flour
-½ cup unsweetened cocoa powder (I use dark)
-¼ teaspoon salt
-⅓ cup rainbow sprinkles

Method
-Preheat oven to 350°F and line a 9×9 or 8×8-inch square pan with parchment paper.
-Add the butter, oil, and chocolate chips to a large microwave-safe mixing bowl. Microwave in 30-second intervals, whisking in between until just melted and smooth.
-Add the sugar to the bowl with the melted chocolate mixture and whisk to combine.
-Next, add the eggs and vanilla extract and whisk.
-Whisk in the flour, cocoa powder, and salt. You’ll have a thick batter.
-Fold in about half of the sprinkles, conserving the rest to sprinkle on top.
-Transfer batter to your prepared pan and cover the top with the rest of the sprinkles.
-Bake for 25-30 minutes until firm. Cool, slice, and enjoy! #homemadebrownies #fudgybrownies #rainbowsprinkles

This incredibly flavorful and easy-to-make salmon

This incredibly flavorful and easy-to-make salmon with mango salsa uses a combination of sweet and tangy BBQ sauce and fresh citrusy salsa to bring bold flavors in less than 30 minutes.

-10 ounces salmon (in individual 5-ounce portions)
-¼ cup BBQ sauce
-1 large mango
-1 large tomato (I used beefsteak)
-½ large red onion
-¼ cup fresh cilantro (optional)
-1 tablespoon lime juice
-1 teaspoon taco seasoning

Method
-Preheat the oven to 475°F.
-Dice your mango, tomato, red onion, and cilantro (optional) and add it to a mixing bowl with the lime juice and taco seasoning. Stir and set aside.
-Pat the salmon dry with a paper towel. If need be, slice it into individual portions, roughly 5-ounces each (you can opt to cook it in a bigger portion, but this will affect cooking time).
-Place the salmon skin-side down on a baking sheet and slather a generous amount of BBQ sauce on the tops and sides of the salmon.
-Roast the salmon on the top rack for 8-12 minutes, until the internal temperature reaches 125-145°F.
-Serve roasted salmon with a heaping pile of mango salsa on top. Enjoy!
