As an environmental scientist, I am always trying to highlight sustainable ingredients. Lentils, especially when sourced organically, are considered a sustainable crop.
They are an incredible source of protein and have a delicious, meaty texture. And what’s more, when compared to other protein sources, the production and processing of lentils can have up to 40 times less greenhouse gas emissions!
