Meatless Monday Challenge


As an environmental scientist, I am always trying to highlight sustainable ingredients. Apples, especially when sourced locally and in season, are considered a relatively sustainable crop.

The apple trees themselves have a very long and productive lifestyle, and apple orchards are great at absorbing carbon.

Plus, when pesticides aren’t used (yay for organic!) the production of apples pose little damage to air, water, land, and soil.

Apples have a long shelf life, are affordable and easy to find, and are extremely versatile. I love them in both sweet and savory recipes!
