Onion

As an environmental scientist, I am always trying to make sustainable ingredients shine. Not only are onions delicious and packed with flavor, but when sourced locally, they’re also considered a sustainable crop.

They have a relatively small environmental footprint as they require little water and energy to grow and emit very little CO2.

And the best part? Onions can generally be sourced locally year-round.
