The year was 2015. You could finally order-ahead Starbucks on your phone, overalls were about to make a massive comeback, and people were arguing over whether a controversial dress was blue or gold.
And you just could not escape avocado toast.
It popped up on every brunch menu, flooded your Instagram feed, and was endorsed by big-name celebrities like Gwyneth Paltrow.
I am not even ashamed to admit that I DOVE into this trend whole-hardheartedly and without pause, and honestly, I can confidently say I will NEVER look back.
Creamy, but healthy. Filling, but light. Fresh, but indulgent. I seriously have some form of avocado toast for either breakfast or lunch 5-7 days a week. I’m not obsessed, you’re obsessed!
And in the days I don’t, it’s because I know I’ll be having Guacamole with dinner. Yes, I have an avocado pretty much every frickin’ day. So I have tons of avocado toast recipes. TONS.
But I have my favorites. Here are 5 creative avocado toasts to up your breakfast game. And yes, I named them. Because that’s how attached I am to these recipes!
Avocado Toast #1 The Bagel
The classic elements of a bagel stacked on crispy toast with the addition of sliced avocado. (If you like this, check out my lox and schmear omelet recipe!) Spread a thin layer of cream cheese on your toasted bread. I use Ezekiel bread with sesame seeds, but any bread will do! Add a couple of thin slices of lox, and half of a slice of avocado. Top it with bagel seasoning and scallions for a flavorful finish.
#2 The Spicy
I LOVE SRIRACHA. Garlicy, spicy, a tiny bit sweet. It’s up there with my favorite condiments. For The Spicy, mash half an avocado, lightly season it with salt and pepper, and spread it evenly over toasted bread. Add a soft boiled egg and finished generously with sriracha and sesame seeds.
Avocado Toast #3 The Sweet
Toast is the best because it’s so versatile. Savory, spicy, sweet- it can handle whatever flavor profile you throw at it. Peaches are in season, so I’ve been using them for this combo recently, but I’ve also made The Sweet with berries, pears, and apples.
Mash half an avocado and lightly season with salt. Spread evenly over your toast. Add chunks of goat cheese and top with your fruit of choice. Drizzle with balsamic glaze and honey for a sweet and tangy finish.
#4 The Superfood
This is my go-to because it’s the PERFECT way to kick-start your day. Nutrient and protein-packed, it’ll give you energy and keep you full all morning. Mash half an avocado and season with salt, pepper, cayenne pepper, and a squeeze of lemon juice. Spread over your toast and add an over-easy egg.
Top with arugula and chia seeds for a peppery taste, a little texture, and an extra punch of nutrition.
Avocado Toast #5 The Caprese
Because why not turn a salad into toast? Adding carbs to anything never hurt. Melt fresh mozzarella on your toast to start. Top it with sliced avocado sprinkled with a light dusting of salt and pepper. Add sliced tomato, fresh basil, and drizzle with balsamic glaze.
